With Easter just around the corner, we invited the famous bunny himself to Sponge HQ to sample some of our favourite Easter cakes. Armed with a healthy appetite and a very discerning palate, he was ready to give his verdict on a selection of our best-loved spring bakes. Would our cakes earn the coveted Bunny Seal of Approval? Let's find out.

First Up: Triple Chocolate Mini Egg Cake

We couldn't start anywhere else. Our Triple Chocolate Mini Egg Cake is an Easter showstopper, featuring layers of rich chocolate sponge filled with milk and white chocolate buttercream, finished with chocolate decorations and crunchy mini eggs. After one bite, Mr E. Bunny's ears immediately perked up. Mr E. Bunny says: "Oh my whiskers! This is Easter on a cake stand. The sponge is beautifully soft, the buttercream is perfectly balanced, and those mini eggs add the most delightful crunch. If you're looking for the ultimate Easter cake, you've found it." Safe to say this chocolate masterpiece received a very enthusiastic tail wag. 

A Spring Favourite: Carrot Cake

Next came a classic. Packed with freshly grated carrots, warming cinnamon, nutmeg, walnuts and juicy sultanas, our Carrot Cake is one of our most popular cakes all year round. Naturally, we were curious to hear what a rabbit thought. Mr E. Bunny says: "Now this is a proper springtime cake. The carrots bring natural sweetness, the spices add warmth, and the walnuts give just the right amount of crunch. It's comforting, delicious and perfect for sharing after an Easter feast." Chocolate may be a favourite, but our Carrot Cake certainly gave it some competition.

A Zesty Surprise: Lemon Drizzle Cake

For our final cake, we went with something a little different. Our Lemon Drizzle Cake combines soft lemon sponge with tangy lemon buttercream for a fresh, uplifting flavour that's perfect for spring. Mr E. Bunny says: "What a wonderful surprise! The lemon flavour is bright and refreshing, and it feels like sunshine in cake form.
