A Happy Accident Worth Celebrating

Like many great British treats, the Bakewell has a wonderfully quirky history. Back in the 1820s, a cook in the Derbyshire town of Bakewell was asked to make a jam tart. Somewhere along the way, things didn't quite go to plan and instead of mixing the ingredients together, they were layered on top of the jam. The result? A happy accident that became one of Britain's best-loved bakes. Fast forward a couple of hundred years and we started wondering: what if we took everything we love about a Bakewell Tart and transformed it into cake? The answer was an award-winning sponge cake that quickly became a customer favourite.

Why We Brought It Back

At Sponge, we're always looking for ways to make great cakes even better. Sometimes that means creating something brand new, and sometimes it means giving an old favourite a little time away before bringing it back with a fresh twist. For our Bakewell Cake, we haven't changed too much (why mess with a good thing?), but we have given it a little glow-up.
